Minestrone Soup

Ingredients
- 1 quart water
- 1 cup dried great northern beans
- 3 Tbsp. olive oil
- 1 onion, (diced)
- 2 cloves garlic, (minced)
- 1/2 cup turnip, (diced)
- 2 cups leeks, (diced)
- 2 tomatoes, (seeded and diced)
- 2 zucchini, (diced)
- 4 carrots (thinly sliced)
- 4 stalks celery, (thinly sliced)
- 2 potatoes, (diced)
- 2 cups cabbage, (shredded)
- 6 cups beef broth
- 1 Tbsp. tomato paste
- 1/2 cup macaroni
- Salt and pepper to taste
Instructions
- Bring water to a boil and add beans. Allow beans to boil for a couple of minutes and remove from heat and let soak for about 1 hour.
- Return beans to heat and bring to a second boil. Cook for 1 hour or until beans are tender.
- Drain beans but reserve 2 cups of the liquid.
- Heat oil in a large stockpot and saute onion and garlic until tender, add remaining ingredients including reserved bean liquid and bring to a boil.
- Reduce heat and simmer for 30 minutes or until vegetables are tender.
- Stir in cooked beans and serve.
